Brunch at home- Homemade Crab Cake Recipe

A positive from working from home is that as much as I miss getting a Cuban toast and café con leche when I’m working in the office. Working from home means I can actually take the time and have a well balanced breakfast. My favorite meal has got to be breakfast, I love a good breakfast or brunch. Something that I have been missing are my weekend brunch trips to different spots. In an effort to fill that void, I create what I crave. When I’m out for brunch I love anything seafood, to be honest, seafood is my go to no matter what the occasion, it must be the Caribbean in me. Anyway crab cakes are always a favorite and I hate when I go somewhere and they’re skimpy on the crab, heavy on the batter. Cooking from home gives you that freedom to make your food just how you like it and I love that. I paired these crab cakes with a special dipping sauce(a.k.a mixing what I could find in my kitchen) and some toast and eggs and it was nothing less of delicious.

Crab cakes 

  • 1 pound lump crabmeat/ imitation crab can be used here as well

  • 1/4 cup mayonnaise

  • 1/2 cup Panko

  • 1/4 cup flour

  • 1 egg

  • 2 Tablespoons green onion sliced

  • 1/2 red bell pepper finely diced

  • 1 Tablespoon cajun seasoning or other seasonings of your choice 

  • juice of half lemon

  • Vegetable oil to fry  

  • lemon and green onion for garnish

    Mix all ingredients and then form the patties with your hands.

    Coat with extra breadcrumbs or flour if needed.

    Fry in vegetable oil for about 4 min on each side until golden brown.

    Garnish and enjoy with dipping sauce of your choice.
    Makes roughly about 8 patties depending on the size of your choosing.
